Each year Farm & Forest collaborates with Synergy Enterprises, a local organization specialized in mapping and adjusting processes to reduce our net global greenhouse gas output. We take our environmental responsibility seriously, and Synergy helps us maintain carbon neutrality by comprehensively measuring our total emissions (including shipping and green coffee imports) and energy consumption (usage at our facility as well as fuel for delivery vehicles).. Wolverine coffee production processes

In addition to its natural terroir, our Wolverine Coffee gets its flavour and texture from the way the beans are processed after harvest. These steps have a big impact on the overall quality of the beans, which is why we work so closely with farmers that conduct them with care. Here are the processing methods used by our partners at origin to prepare the beans for our Wolverine Coffee for export:

Fully Washed

Fully washed coffee refers to a processing method where the mucilage surrounding the coffee beans is entirely removed. After harvesting, the outer skin of the coffee cherry is de-pulped, and the beans are then fermented and washed to eliminate any remaining mucilage. This process is favored for its ability to produce clean and consistent flavors, allowing the unique characteristics of the coffee beans and the growing region to shine through in the final cup.

Wet-Hulled

In the wet-hulled process, the coffee cherries are harvested and pulped, but the beans are only partially dried, retaining around 30-35% moisture. The wet-hulling stage involves removing the parchment layer from the partially dried beans, giving them a distinctive appearance. The beans are then fully dried under the sun to achieve the desired moisture content for storage and export, typically around 12%. Wet-hulled coffee is known for its unique earthy and full-bodied flavour profile, making it a sought-after choice among coffee enthusiasts.

Roasting  

We roast the beans in our carbon-neutral facility here on the west coast of British Columbia. And we created this particular blend as a dark, full-bodied tribute to the wolverine — a coffee that dark-roast lovers would crave.

Our team carefully roasts the beans just past the second crack, allowing the natural sugars to caramelize without burning.

It is important to explain that the coffee beans go through various stages, and the "cracks" are audible popping sounds that occur as the beans release moisture and gases. The first crack occurs when the beans expand and release steam, making a popping sound similar to popcorn. This signifies the beans are reaching the early stages of light to medium roast levels. If the roasting continues past the first crack and the beans are heated further, they reach the second crack. The second crack is a more rapid and louder series of pops. It indicates that the internal structure of the coffee beans is breaking down as the sugars caramelize and the beans develop a darker roast profile.

Then we release them into the cooling tray, where our cooling system halts the Maillard reaction and degassing begins. Freshly roasted coffee beans release accumulated carbon dioxide (CO2) and other volatile compounds, so after roasting the beans need this time to rest or "degas" before brewing to allow the excess gas to dissipate.

The next step is to bag them up and seal them right away to lock in flavour and freshness.

How does the Wolverine Coffee protect nature?

Farm & Forest donates 15 cents from every pound of Wolverine coffee sold to the Nature Conservancy of Canada. Since 1962, NCC has helped conserve 14 million hectares (35 million acres) of critical habitat.

We are now highlighting the Nature Conservancy of Canada’s Darkwoods Conservation Area in south-eastern British Columbia. Darkwoods is a breathtaking wilderness landscape and an example of effective large-scale conservation. It plays a central role in a network of parks, and wildlife management areas, that provide over 1,100 km2 for animals to roam freely.

That way, our favourite beverage not only leaves the barest impact on the environment; it also helps restore precious habitats for species like the wolverine.


What’s the best way to brew our Organic Wolverine Coffee?

Our team recommends brewing the Wolverine with a French press, or with a manual or automatic dripper. We’ve also enjoyed it as espresso, especially for milk-based drinks like lattes, flat whites, and cortados. Read on for our favourite French Press recipe!

Organic Wolverine Coffee French Press Recipe:

We like a 1:16 coffee-to-water ratio, which you can use to scale this recipe up or down as needed.

 

You will need:

  • French press
  • Kettle
  • Grinder (burr, if possible)
  • Scale (digital, in grams, if possible)
  • Timer
  • 60g Wolverine coffee
  • 960g water (195-200°F)

Step 1

Bring the water to a boil and pour some of it into the French press to preheat it. If you can, set the temperature to stay at 195-200°F.

 

Step 2

Coarsely grind the coffee so the particles resemble coarse sea salt. Discard the hot water from the press and add the ground coffee.

 

Step 3

Place the press on your scale and tare to zero. Start the timer and pour the hot water over the grounds until you reach 960g.

Step 4

When the timer reaches 1 minute, agitate the grounds with a spoon to ensure they are evenly saturated.

 

Step 5

Carefully put the lid on the press, allowing the plunger to rest just above the surface of the water and grounds.

 

Step 6

When the timer reaches 4 minutes, slowly depress the plunger. Serve immediately and enjoy when the coffee reaches your desired drinking temperature.

Our Wolverine Coffee beans stay fresh when protected from oxygen, light, and heat. So the best way to store them is in an airtight, opaque container in a cool room. If you don’t think you’ll make it through the whole bag in 4 weeks, you can seal the beans (a vacuum-sealer works best) and freeze them — some of our customers have reported great results from beans frozen for as many as 9 months.

Can I make espresso with the Wolverine Coffee?

Go right ahead! Espresso is a brew method, not a type of bean, and while certain coffees are roasted with a particular brew method in mind, it’s fun to switch it up. We’ve tried all of our coffees as espresso, and the Wolverine makes a deep, dark, almost savory shot. Give it a try!
